RECIPE :: apple and pear cake
This is a very moist cake that holds itself together very well. Made from fresh fruit it has its own sweetness but some spiciness is added with the cardamom and ginger.
Ingredients
200g / 7oz of flour,
2tsp of baking powder,
1tsp of bicarbonate of soda,
4 pears peeled and cored (approximately 300g / 12oz),
6 small sweet royal gala apples peeled and cored (approximately 300g / 12oz),
1tbsp peeled and minced ginger,
½ tsp of cardamom,
100ml of maple syrup,
100ml of sunflower oil,
½ tsp of salt and
2tsp of apple cider vinegar.

Pre heat the oven to gas mark 4 / 180C / 350F. |

Combine the flour with the baking powder and bicarbonate of soda into a large mixing bowl. |

Chop the fruit into small pieces and put into a saucepan over a low heat for 10 minutes to soften the fruit and to extract the moisture. |

Mash the fruit up until you are left with lots of puree but enough whole pieces to give the cake some character. |

Combine the stewed fruit with the ginger, cardamom, maple syrup, sunflower oil, salt and vinegar. |

Combine the wet mixture with the dry ingredients. |

Put the cake batter into a lined 9” cake tin and bake for 25-30 minutes or until an inserted knife comes out only slightly wet (you don’t want it to dry out to much). |
