RECIPE :: arame casserole
(2-3 servings)
For Christmas I was given a beautiful blue casserole dish from Patrick’s parents. I had never made a casserole so a whole new cooking style was open to me and this was one of the first recipes I came up with. Arame is my favourite seaweed but because it’s so light I have given the volume instead of weight.
Ingredients
125ml of dried arame,
2 medium onions (roughly chopped),
2 medium carrots (roughly chopped),
1 red pepper (roughly chopped),
1 green pepper (roughly chopped),
150g / 5½oz of mushrooms (halved),
60ml of olive oil,
½ tbsp of maple syrup,
1tsp of tamari,
2 cloves of crushed garlic,
1tbsp of dry oregano,
2 bay leaves,
½ tsp of salt and
3tbsp of water.

Pre-heat the oven to gas mark 6/ 200C / 400F. |

Soak the arame in enough water to cover the seaweed for 10 minutes. Once soaked discard the water. |

Combine all the ingredients in a casserole dish. |

Bake for 30 – 35 minutes or until the vegetables are sweet and tender. |
