RECIPE :: arame and ginger salad

A different sort of salad using seaweed and ginger that looks fantastic in all its black glory.

Ingredients
Main body
30g / 1oz of dried arame.

Dressing
1½  inches/ 4cm of ginger and
2tbsp of sesame seeds,
2tbsp of sesame oil,
½ tsp of fresh lemon juice and ½ tsp of salt.

Method
1) Cover the arame with warm water and leave for 20 minutes.  Drain.
2) To make the dressing; dry fry the ginger and sesame seeds over a medium heat for a few minutes until the seeds are lightly browned.
3) Place the ginger and seeds into a small bowl and mix in all the remaining dressing ingredients.  Leave to stand for 10 minutes
4) To finish; when you are ready to serve combine the arame with the dressing.
