RECIPE :: arame and walnut loaf

I’ve got to admit that when I came up with this recipe I honestly thought it wasn’t going to work, but much to my surprise I was proven wrong, and the result is a moist loaf with two very interesting flavours that compliment each other very well.

Ingredients
125ml of arame,
2tbsp of maple syrup,
350ml of warm water,
3tbsp of walnut oil,
1tsp tamari,
1tsp of salt,
150g / 5½oz of maize meal,
100g / 3½oz of flour,
30g / 1oz of hemp seed flour,
50g / 2oz of crushed walnuts,
1tsp of baking powder and
½ tsp of baking soda.

Method
1) Pre-heat the oven to gas mark 4 / 180C / 350F.
2) Mix the arame with the wet ingredients and salt, and leave to stand for 10 minutes.
3) Mix all the dry ingredients together.
4) Combine the wet and dry ingredients and place in a lined 2lb loaf tin and bake for 30-35 minutes.
