RECIPE :: baked potato cakes

makes 4 cakes Ingredients
500g / 18oz of potatoes,
1 large carrot (roughly chopped),
2tbsp of olive oil,
1 large onion (thinly sliced),
1 red pepper (thinly sliced),
2 cloves of crushed garlic,
2 chilli peppers (thinly sliced),
2tbsp of gram flour,
1tbsp of water,
1tsp of salt,
1tsp of dried marjoram,
1tsp of marmite and
¼ tsp of pepper,

Method
1) Pre-heat the oven to gas mark 4 / 180C / 355F.
2) Steam the potatoes and carrots together for 10 minutes.  Then mash them together.
3) Meanwhile fry the onions with the olive oil over a medium/low heat for 5 minutes.
4) Add the pepper, garlic and chillies to the frying pan and cook for a further 5 minutes.
5) Mix the gram flour and water together to form a paste.
6) Combine all the ingredients together.
7) Form into 4 balls and flatten them. 
8) Put them onto a lined tray and bake for 30-35 minutes.
