RECIPE :: banana and raisin cake

I enjoyed the apple and pear cake so much I thought I would try doing a banana version of it. If you feel adventurous then try playing with other fruits and see what cakes you can come up with.

Ingredients
200g / 7oz of flour,
2tsp of baking powder,
1tsp of bicarbonate of soda,
50g / 2oz of raisins,
4 ripe bananas,
200ml of maple syrup,
100ml of sunflower oil,
½ tsp of salt,
2tsp of vanilla extract and
2tsp of apple cider vinegar.

Method
1) Pre heat the oven to gas mark 4 / 180C / 350F.
2) Combine the flour with the baking powder, bicarbonate of soda and raisins into a large mixing bowl.
3) Mash the bananas up to make approximately 250ml of pureed banana.
4) Combine the maple syrup with the sunflower oil, salt, vanilla extract and vinegar until emulsified.
5) Combine the wet mixture with the dry.
6) Put the cake batter into a lined 9” cake tin and bake for 25-30 minutes or until an inserted knife comes out clean.
