RECIPE :: banana and raisin cake
I enjoyed the apple and pear cake so much I thought I would try doing a banana version of it. If you feel adventurous then try playing with other fruits and see what cakes you can come up with.
Ingredients
200g / 7oz of flour,
2tsp of baking powder,
1tsp of bicarbonate of soda,
50g / 2oz of raisins,
4 ripe bananas,
200ml of maple syrup,
100ml of sunflower oil,
½ tsp of salt,
2tsp of vanilla extract and
2tsp of apple cider vinegar.
Method

Pre heat the oven to gas mark 4 / 180C / 350F. |

Combine the flour with the baking powder, bicarbonate of soda and raisins into a large mixing bowl. |

Mash the bananas up to make approximately 250ml of pureed banana. |

Combine the maple syrup with the sunflower oil, salt, vanilla extract and vinegar until emulsified. |

Combine the wet mixture with the dry. |

Put the cake batter into a lined 9” cake tin and bake for 25-30 minutes or until an inserted knife comes out clean. |
