RECIPE :: carrot, orange and ginger soup

This is a very simple soup which goes down well with its gentle warm flavours and velvety texture. Great for dinner parties as you can whiz this up and spend more time on your dessert or just chilling and pretending to your guests that you’ve worked like a dog all day.

Ingredients
2tbsp of olive oil,
1 onion (finely chopped),
500g of carrots (finely chopped),
1500ml of water,
250ml of freshly squeezed orange juice,
2 inches of fresh ginger (peeled and finely chopped),
1tsp of salt and
¼ tsp of pepper.

Method
1) Fry the onion in the oil over a low/medium heat for 5 minutes. Add the carrots and fry over a medium heat for a further 10 minutes.
2) Combine the rest of the ingredients with the carrots and bring to the boil. Lower the heat and simmer for 10 minutes or until the carrots have softened
3) Liquidize the soup and serve.
