RECIPE :: carrot salad

Carrots and dates that’s all I need to say.

Ingredients
Main body
50g / 2oz of blanched cashews,
1tbsp of sesame seeds,
4 medium carrots (grated) and
5 fresh dates (thinly chopped).

Dressing
1tsp of fresh lemon juice,
1tsp of balsamic vinegar,
½ tsp of dried basil and
½ tsp of salt.

Method
1) To make the main body; fry the cashews and sesame seeds over a medium heat for a few minutes or until the seeds are lightly brown and fragrant. Combine with the carrots and dates.
2) To make the dressing; combine all the ingredients until emulsified.
3) To finish; add the dressing to the carrot mix and let sit for 20 minutes.
