RECIPE :: chickpea baked beans

I love this dish for its wonderful ease and simplicity. This means I tend to eat it once or twice a week. It makes a far superior dinner than baked beans.

Ingredients
1 tin of chick peas (drained),
1 tin of chopped organic tomatoes,
½ tsp of salt,
1tsp of curry powder,
½ a handful of fresh coriander (optional) and
pepper to taste.

Method
1) Combine all of the ingredients except for the coriander and cook over a medium heat for 10 minutes or until the tomatoes have thickened.
2) Finely chop the coriander and mix into the chickpea mix.  Cook for a further 2 minutes.
3) Serve immediately.
