RECIPE :: cinnamon and cardamom spiced rice
2-4 servings
A simple rice dish that is packed with subtle flavours is brought to life with the beautiful colour of turmeric.
Ingredients
275g/10oz of basmati rice,
2tbsp olive oil,
1 cinnamon stick,
8 cardamom pods,
½tsp of turmeric and
1100ml of water.
Method

Wash the rice thoroughly in cold water. Fry in the olive oil over a medium heat until dry. |

Add the water, cinnamon, cardamom and turmeric in with the rice and bring to the boil. Lower the heat and gently simmer covered for 15 minutes or until softened. |

Remove from the heat and leave to stand for 5 minutes. |
| 4) |
Remove the cinnamon and cardamom before serving. |
