RECIPE :: cinnamon and cardamom spiced rice
A simple rice dish that is packed with subtle flavours is brought to life with the beautiful colour of turmeric.
275g/10oz of basmati rice,
2tbsp olive oil,
1 cinnamon stick,
8 cardamom pods,
½tsp of turmeric and
1100ml of water.
||Wash the rice thoroughly in cold water. Fry in the olive oil over a medium heat until dry.
||Add the water, cinnamon, cardamom and turmeric in with the rice and bring to the boil. Lower the heat and gently simmer covered for 15 minutes or until softened.
||Remove from the heat and leave to stand for 5 minutes.
||Remove the cinnamon and cardamom before serving.
