RECIPE :: cinnamon and cardamom spiced rice

2-4 servings

A simple rice dish that is packed with subtle flavours is brought to life with the beautiful colour of turmeric.

275g/10oz of basmati rice,
2tbsp olive oil,
1 cinnamon stick,
8 cardamom pods,
½tsp of turmeric and
1100ml of water.

1) Wash the rice thoroughly in cold water. Fry in the olive oil over a medium heat until dry.
2) Add the water, cinnamon, cardamom and turmeric in with the rice and bring to the boil.  Lower the heat and gently simmer covered for 15 minutes or until softened.
3) Remove from the heat and leave to stand for 5 minutes.
4) Remove the cinnamon and cardamom before serving.
