RECIPE :: citrus rice

This is such a small and simple recipe that I wasn’t going to put it into the recipe book but I love it so much I couldn’t help but put it in. The citrus flavour is very strong and refreshing and works well with heavy or oily dishes.
Ingredients
275g/10oz of basmati rice,
2tbsp olive oil,
1 lemon (juice and zest),
1 lime (juice and zest) and
1100ml of water.
Method

Wash the rice thoroughly under cold water. Fry in the olive oil over a medium heat until dry. |

Place the zest, flesh and juice of the lemon and lime in with the rice. |

Slice the pith (white shell) into large pieces and place in with the rice. |
| 4) |
Add the water into the rice and bring to the boil. Lower the heat and gently simmer covered for 15 minutes or until softened. |

Remove from the heat and leave to stand for 5 minutes. |
| 6) |
Remove the pith before serving. |
