RECIPE :: citrus rice

2-4 servings

This is such a small and simple recipe that I wasn’t going to put it into the recipe book but I love it so much I couldn’t help but put it in. The citrus flavour is very strong and refreshing and works well with heavy or oily dishes.

Ingredients
275g/10oz of basmati rice,
2tbsp olive oil,
1 lemon (juice and zest),
1 lime (juice and zest) and
1100ml of water.

Method
1) Wash the rice thoroughly under cold water. Fry in the olive oil over a medium heat until dry.
2) Place the zest, flesh and juice of the lemon and lime in with the rice.
3) Slice the pith (white shell) into large pieces and place in with the rice.
4) Add the water into the rice and bring to the boil. Lower the heat and gently simmer covered for 15 minutes or until softened.
5) Remove from the heat and leave to stand for 5 minutes.
6) Remove the pith before serving.
