RECIPE :: Coconut Ice

(Makes 6 large bars)

Marian used to make coconut ice every morning and eat it all by the next morning. Not sure how she could have gone through a phase like that without getting diabetes, or at least a complete inability to sleep from being so juiced on sugar, but hey ho at least her little story gave me something to put on this recipe. This recipe though is not the traditional white and pink one as it is a light golden brown due to the maple syrup. Don’t let the colour distract you from the gentle taste of caramelized sugar and maple syrup mixing with sweet desiccated coconut.

Ingredients
50g of butter,
500g of icing sugar,
125ml of maple syrup,
150g of desiccated coconut and
1tsp of vanilla extract.

Method
1) Lightly butter an 8 inch square baking tray and line with rice paper.
2) Melt the butter in a saucepan over a low heat.
3) Add the icing sugar to the butter and mix together as well as you can.
4) Pour the maple syrup into the pan and mix well, stirring constantly for 5 minutes or until you start getting a caramelised fragrance.
5) Take the pan off the heat and mix in the desiccated coconut and vanilla extract. Put into the baking tray.
6) Place the tray into the refrigerator for 1 hour to set.
