RECIPE :: cucumber raita

This is often made with yoghurt but I find that the soft silken tofu will give it a wonderful, clean flavour that is lifted to a new level with the organic cucumber and onion to give it a very fresh flavour

Ingredients
½ tsp of cumin seeds,
1tsp of mustard seeds,
300g / 10½oz of soft silken tofu,
80ml of olive oil,
3tbsp of fresh lemon juice,
½ tsp of salt,
2 cloves of crushed garlic,
1tsp of balsamic vinegar,
1 medium onion (thinly sliced) and
½ a cucumber (12cm / 5 inches).

Method
1) Dry fry and crush the cumin and mustard seeds.
2) Place the tofu, crushed seeds, olive oil, lemon juice, salt, garlic and balsamic vinegar into a blender and whiz away until very smooth and creamy.
3) Cut the cucumber into quarters so you get the following effect.

Thinly slice the cucumber.

4) Now combine the onions and cucumbers with the cream and enjoy.
