RECIPE :: date and walnut salad

On my boyfriends’ birthday I wanted to serve him a Waldorf salad with some chestnut pate and crepes but I couldn’t find the salad recipe. Since I really wanted to make a walnut based salad I came up with this recipe. The dressing was simply a random combination of anything I could get my hands on, I liked it so much I thought I’d put in this book as an example of what you can achieve when you allow yourself to have some random creative fun.

Ingredients
Main body
½ a cos lettuce,
½ a cucumber (thinly sliced),
100g / 3½oz of roast walnuts (heavily crushed) and
20 fresh dates (thinly sliced).

Dressing
2tbsp of walnut oil (or olive oil),
1tbsp of red wine vinegar,
1tsp of fresh lemon juice,
¼ tsp of salt,
a pinch of dried basil and
¼ tsp of pepper.

Method
1) To make the main body; remove the main stalk from the cos lettuce and rip the rest of the lettuce into smaller pieces.
2) Combine all the main body ingredients together.
3) To make the dressing; mix all the dressing ingredients together until emulsified.
4) To finish; combine everything together and mix well to fully coat the leaves with the dressing.  Serve immediately.
