RECIPE :: date and walnut salad
On my boyfriends’ birthday I wanted to serve him a Waldorf salad with some chestnut pate and crepes but I couldn’t find the salad recipe. Since I really wanted to make a walnut based salad I came up with this recipe. The dressing was simply a random combination of anything I could get my hands on, I liked it so much I thought I’d put in this book as an example of what you can achieve when you allow yourself to have some random creative fun.
Ingredients
Main body
½ a cos lettuce,
½ a cucumber (thinly sliced),
100g / 3½oz of roast walnuts (heavily crushed) and
20 fresh dates (thinly sliced).
Dressing
2tbsp of walnut oil (or olive oil),
1tbsp of red wine vinegar,
1tsp of fresh lemon juice,
¼ tsp of salt,
a pinch of dried basil and
¼ tsp of pepper.
Method

To make the main body; remove the main stalk from the cos lettuce and rip the rest of the lettuce into smaller pieces. |

Combine all the main body ingredients together. |

To make the dressing; mix all the dressing ingredients together until emulsified. |

To finish; combine everything together and mix well to fully coat the leaves with the dressing. Serve immediately. |
