RECIPE :: Figs with red wine and balsamic reduction

This recipe was written and designed for the potato and parsnip rosti stacks but will give a beautiful addition to many dishes.

Ingredients
400ml of red wine,
2 shallots (finely chopped),
1 clove of crushed garlic,
1tbsp of balsamic vinegar,
2tsp of sugar and
4 fresh figs.

Method
1) Place all the ingredients except the figs into a saucepan and bring to the boil. Lower the heat and simmer for 15-20 minutes or until the liquid has reduced to about a quarter of its original volume.
2) Cut the figs in half and place cut side down into the red wine reduction and fry over a low heat for 5 minutes. Serve immediately.
