RECIPE :: fishless tuna

One of my favourite ingredients get to be used again – chickpeas, this time in a quick and easy spread. My partner thinks it tastes like tuna, I’m not convinced but then it does have the consistency and oiliness of tuna. I prefer to think of it as a really tasty combination of chickpeas and tomatoes.

Ingredients
2tsp of mustard seeds,
250g / 9oz of cooked chickpeas (mashed),
100g / 3½oz of cherry tomatoes (finely chopped),
1tbsp of fresh lemon juice,
4tbsp of olive oil,
½ tsp of cayenne pepper and
½ tsp of salt.

Method
1) Dry fry and crush the mustard seeds.
2) Combine all the ingredients together.

Suggestions of use
To try out something different you can place some of this mixture on the bottom of a Nori sheet and roll away to make some sushi.
