RECIPE :: Fruit cake with a marzipan centre

I am a big fan of fruit cake and usually coat it thickly with marzipan and icing but the Germans really know how to do it by placing the marzipan in the centre of the cake. The slow cooking allows the marzipan to merge beautifully with the fruit.

Ingredients
Marzipan
150g of icing sugar,
200g of ground almonds,
1tsp of almond extract and
1½ -2tbsp of water.

Cake
300g of flour,
2tsp of baking powder,
1tsp of bicarbonate of soda,
1tbsp of mixed spice,
1tsp of cinnamon,
100g of sugar,
600g of mixed fruit,
50g of mixed peel,
1tsp of salt,
400ml of water,
100ml of sunflower oil and
2tsp of cider vinegar.

Method
1) Pre-heat the oven to gas mark 2 / 150C / 300F.
2) To make the marzipan; combine the dry ingredients then add the water and extract to form a firm marzipan dough.
3) To make the cake; combine the dry ingredients (not including the salt) and place into a mixing bowl.
4) Combine the wet ingredients and salt. Combine the wet ingredients with the dry.
5) Place half of the cake mixture into a 9" cake tray. Cover the cake mix with the marzipan then place the rest of the cake mix over the top.
6) Bake for 2 hours.
