These griddled potatoes gives you a very funky striped potato and with the chestnuts it makes an irresistible dish to make for any meal that asks for boiled potatoes.

Soak the chestnuts overnight. For a more rapid soak, put them into boiling water and boil for 10 minutes. Remove from the heat and leave to soak for 1 hour. |

Remove any skin left on the chestnuts. Place the chestnuts into a saucepan and cover with water and bring to the boil. Lower the heat and simmer for 45 – 60 minutes or until softened. Quarter the chestnuts and put to one side. Save the water for the potatoes. |

Peel the potatoes and cut them like the picture below. |

Put the potatoes in the same water that the chestnuts were cooked in and simmer for 8 minutes or until par boiled. |

Take each of the par boiled potatoes and rub the lemon over them. |

In a griddle pan fry the olive oil and sugar over a medium heat for 2 minutes. Place the potatoes into the pan and fry for 5 minutes, then flip the potatoes over and fry for another 5 minutes. In the last 2 minutes drop the chestnuts in with the potatoes. Serve immedietly. |
