RECIPE :: Herby pasta
This recipe will give you a pasta dough that will be flattened and pressed using a pasta maker. Follow the instructions which come with the machine on how to process your pasta or roll it out thinly and cut and shape into your desired style.
Ingredients
½ a handful of fresh parsley (finely chopped),
½ a handful of fresh coriander (finely chopped),
250g of flour,
½ tsp of salt,
2tbsp of water,
150g of firm silken tofu and
2tbsp of olive oil.
Method

Combine the herbs with the flour and salt. |

Blend the water, tofu and oil and mix into the herbed flour. Knead the dough for 4-5 minutes. You should get a firm dough but if it’s too flacky and dry, add in a few drops of water and knead for a few more minutes. |

Cover and leave to stand for 1 hour. |
