RECIPE :: Herby pasta

This recipe will give you a pasta dough that will be flattened and pressed using a pasta maker. Follow the instructions which come with the machine on how to process your pasta or roll it out thinly and cut and shape into your desired style.

Ingredients
½ a handful of fresh parsley (finely chopped),
½ a handful of fresh coriander (finely chopped),
250g of flour,
½ tsp of salt,
2tbsp of water,
150g of firm silken tofu and
2tbsp of olive oil.

Method
1) Combine the herbs with the flour and salt.
2) Blend the water, tofu and oil and mix into the herbed flour. Knead the dough for 4-5 minutes. You should get a firm dough but if it’s too flacky and dry, add in a few drops of water and knead for a few more minutes.
3) Cover and leave to stand for 1 hour.
