RECIPE :: mango and passion fruit sorbet
This sorbet uses two tropical fruits that compliment each other very well with their flavours at their strongest in the half defrosted state of the sorbet. When served with crepes and a piece of fresh mint, as garnish, this sorbet will make a very light and delicate dessert. This makes it perfect for ending a filling main course.
Ingredients
5 medium mangos,
8 passion fruits and
1tbsp of sugar.
Method

Place the mango flesh and passion fruit including the seeds into a blender and blend until smooth. |

Squeeze the juice through a muslin bag to remove the seeds. |

Mix the sugar with the juice. |

Place the liquid into an ice-cream maker or put into a fridge and take out every hour and stir thoroughly. |

This can be stored in the freezer but will need to be defrosted for 20-30 minutes before serving. |
