RECIPE :: Nutty Tofu burgers

(Makes 4-6 burgers)

In an attempt at stopping myself and my partner from buying processed foods I came up with this recipe which has helped on those lazy days as you can freeze them and grill (or fry) from frozen to make a quick and easy meal with new potatoes and peas.

Ingredients
75g of hazelnuts,
75g of cashews,
50g of sunflower seeds,
1tsp of mustard seeds,
250g of firm tofu,
1½ tsp of tamari,
3 cloves of crushed garlic,
½ tsp of salt,
¼ tsp of pepper,
2tbsp of olive oil,
1 medium onion (minced),
1 medium carrot (grated) and
1 handful of parsley (finely chopped).

Method
1) Dry fry the nuts over a medium heat for 5 minutes.
2) Add the sunflower seeds to the pan and fry for a further 3 minutes or until the seeds start popping.
3) Place the nuts and sunflower seeds into a blender and whiz away until fully powdered.
4) Dry fry and crush the mustard seeds.
5) Place the tofu, mustard seeds, tamari, garlic, salt and pepper into an empty blender and whiz away until smooth.
6) Fry the onion with the olive oil over a medium/low heat for 8 minutes.
7) Combine all the ingredients together.
8) Split the burger mix into 4-6 balls and shape.
9) Grill or shallow fry until both sides are a golden brown.

Variations

In this recipe I have used 150g of nuts, namely hazelnuts and cashews, but feel free to use any combination of nuts that you want.
