RECIPE :: Onion bake with pine nuts

(serves 3-4)

I have wanted to make a dish that gives the red onion a prominent place and this is what I came up with. It is a dish that is filled with the rich taste of the red onion and topped with tomatoes and potatoes, though in all fairness I like this without the potatoes and tomatoes.

Ingredients
5tbsp of olive oil,
4 large red onions (finely sliced),
8 shallots (quartered),
4 cloves of garlic (quartered),
1tsp of fresh rosemary leaves (finely minced),
2tsp of salt,
1-2 large potatoes,
2-3 large vine tomatoes,
50g of pine nuts and
¼ tsp of pepper.

Method
1) Pre-heat the oven to gas mark 6 / 200C / 400F.
2) Mix the onions, shallots and garlic, rosemary, salt and 3tbsp of olive oil. Place into a 9" Pyrex bowl.
3) Slice the potatoes and tomatoes into 3mm thick circular slices.
4) Cover the onions by placing a potato slice on the top, then place a tomato slice over the top of half of the potato slice, then a potato slice over half of the tomato slice and so on until the onions are fully covered.
5) Drizzle the remaining olive oil over the potatoes. Sprinkle the salt, pepper and pine nuts over the top.
6) Bake for 1 hour or until the potatoes are cooked through.
