RECIPE :: Onion bake with pine nuts
(serves 3-4)
I have wanted to make a dish that gives the red onion a prominent place and this is what I came up with. It is a dish that is filled with the rich taste of the red onion and topped with tomatoes and potatoes, though in all fairness I like this without the potatoes and tomatoes.
Ingredients
5tbsp of olive oil,
4 large red onions (finely sliced),
8 shallots (quartered),
4 cloves of garlic (quartered),
1tsp of fresh rosemary leaves (finely minced),
2tsp of salt,
1-2 large potatoes,
2-3 large vine tomatoes,
50g of pine nuts and
¼ tsp of pepper.

Pre-heat the oven to gas mark 6 / 200C / 400F. |

Mix the onions, shallots and garlic, rosemary, salt and 3tbsp of olive oil. Place into a 9" Pyrex bowl. |

Slice the potatoes and tomatoes into 3mm thick circular slices. |

Cover the onions by placing a potato slice on the top, then place a tomato slice over the top of half of the potato slice, then a potato slice over half of the tomato slice and so on until the onions are fully covered. |

Drizzle the remaining olive oil over the potatoes. Sprinkle the salt, pepper and pine nuts over the top. |

Bake for 1 hour or until the potatoes are cooked through. |
