RECIPE :: onion bhajis

The joy of Indian cooking and oh the joy that is Onion Bhajis. Needless to say, I love them with a passion and this recipe was created when I was invited to do a stall on vegan cooking from around the world. To make this recipe a bit more special I thought I’d put a lot of fresh herbs into it which gives it a much deeper taste and makes them look fantastic.

Ingredients
2tsp of coriander seeds,
1tsp of cumin seeds,
125g / 4½oz of gram flour,
½ tsp of cayenne pepper,
170ml of water,
2 medium onions (finely chopped),
½ a handful of fresh coriander (finely chopped),
½ a handful of fresh parsley (finely chopped) and
enough oil for deep frying.

Method
1) Dry fry and crush the coriander and cumin seeds.
2) Combine the crushed seeds, gram flour, cayenne pepper and water to a smooth batter.
3) Combine the batter with the onions and herbs.
4) Heat the oil until very hot.
5) Place a tablespoon of the bhaji mixture into the hot oil and fry for about 7 minutes or until a light golden brown colour.
