RECIPE :: onion bhajis
The joy of Indian cooking and oh the joy that is Onion Bhajis. Needless to say, I love them with a passion and this recipe was created when I was invited to do a stall on vegan cooking from around the world. To make this recipe a bit more special I thought I’d put a lot of fresh herbs into it which gives it a much deeper taste and makes them look fantastic.
Ingredients
2tsp of coriander seeds,
1tsp of cumin seeds,
125g / 4½oz of gram flour,
½ tsp of cayenne pepper,
170ml of water,
2 medium onions (finely chopped),
½ a handful of fresh coriander (finely chopped),
½ a handful of fresh parsley (finely chopped) and
enough oil for deep frying.
Method

Dry fry and crush the coriander and cumin seeds. |

Combine the crushed seeds, gram flour, cayenne pepper and water to a smooth batter. |

Combine the batter with the onions and herbs. |

Heat the oil until very hot. |

Place a tablespoon of the bhaji mixture into the hot oil and fry for about 7 minutes or until a light golden brown colour. |
