RECIPE :: pancakes

(makes 4-8 pancakes)

There is no way I can express in words how much I adore pancakes, their simplicity and versatility makes the most complex and intricate recipes seem a complete waste of time. This is a recipe that tastes exactly like a non-vegan pancake.

Ingredients
225g / 8oz of flour,
1tsp of salt,
2tbsp of vegetable oil and
450ml of milk (or water).

Method
1) Sieve the flour and mix in the salt.
2) Combine the rest of the ingredients with the flour and blend together.
3) Leave the mixture standing for at least 20 minutes.
4) Place a frying pan over a high flame until the pan is very hot.
5) Pour in a quarter of the mixture (an eighth for the French style thin pancakes) into an oiled frying pan and cook until all liquid on the top of the pancake has solidified (about 1-2 minutes).  Whilst it is cooking tease the sides of the pancake away from the pan with a spatula and then gently loosen the underneath of the pancake from the pan.
6) Now for the fun; flip the pancake and continue cooking for another 30 seconds.
7) Serve warm or cold, with a filling of your choice.

Fillings

This is where pancakes really come into their own. Basically anything goes, whatever you like put it in an see if it works, though I have to admit that never mind how much experimenting I’ve done I still prefer the simplicity of lots of fresh lemon juice, a bit of fresh lemon rind and lashings of organic full flavoured sugar.
