RECIPE :: Sun dried tomato and olive pizza
(makes 2 pizzas)
Pizza is such a common dish now for people to eat and I used to love going to a pizza restaurant with me and my friend Alex (ignore the grammar here as Alex should ALWAYS be second to me hehe) whilst dressed in drag and confusing the guys who thought they were going into the men’s toilet and seeing what they thought were women touching up their make up. Anyway, needless to say I missed pizza greatly when I had to give up wheat until I got my act together and made potato based bases.
Ingredients
Pizza base
400g of potatoes,
250ml of water,
300g of flour,
1tsp of basil,
½ tsp of salt,
1tsp of baking powder and
½ tsp of bicarbonate of soda.
Tomato topping
1 tin of tomatoes,
1 small onion (roughly chopped),
1 red pepper (roughly chopped),
2 cloves of crushed garlic,
½ tsp of paprika,
½ tsp of salt and
1tbsp of balsamic vinegar.
Pizza topping
150g of halved olives,
50g of olive oil soaked sun dried tomatoes (finely chopped),
2 medium onions (finely chopped) and
2tbsp of capers.
Method

Pre-heat the oven to gas mark 6 / 200C / 400F. |

To make the pizza base; boil the potatoes with their skins on. Peel and mash them when cooked. |

Mix the water with the mashed potatoes. |

In a separate bowl mix the flour, basil, salt, baking powder and bicarbonate of soda. |

Combine the wet and dry ingredients together and kneed together for five minutes and set aside. |

To make the tomato topping; place all the ingredients into a blender and whiz away until smooth. |

Halve the pizza dough and flatten into a 10" circle, coat with half of the tomato topping and scatter half of the pizza topping over the tomatoes. Repeat with the other half of the pizza dough. |

Bake for 20 minutes. |
