RECIPE :: Vegetable burger

(Makes 4 burgers)

This is my own version of the veggie burger; it is fast to make and can be frozen for those days when making something becomes an unbearable chore. If you have never made your own burgers before then I hope you can have some fun with this and play with the vegetables you use. Just remember that you will need to squeeze as much liquid as you can out of them.

Ingredients
1tsp of caraway seeds,
1tsp of coriander seeds,
1tsp of fennel seeds,
2tsp of cumin seeds,
2tbsp of olive oil,
1 medium onion (finely chopped),
500g of courgettes (finely grated),
150g of sweet potatoes (finely grated),
200g of carrots (roughly grated),
1 handful of fresh coriander (finely minced),
100g of gram flour,
1 chilli (finely chopped),
½ tsp of salt and
¼ tsp of pepper.

Method
1) Dry fry and crush the caraway, coriander, fennel and cumin seeds.
2) Fry the onion with the olive oil over a low/medium heat for 8 minutes.
3) Squeeze as much liquid out of the courgettes as you can, you should get over 250ml of juice which you can either throw away, feed to your plants or drink.
4) Combine all the ingredients together.
5) Form the burger mix into four burgers.
6) Lightly oil a frying pan and fry your burgers over a medium heat for 5 minutes each side or until lightly browned.
