RECIPE :: wild rice and herbs
Wild rice is nutty on its own so here I have tried to further enhance this nuttiness by frying it in hazelnut oil and adding some almonds at the end.
Ingredients
1tbsp of hazelnut oil (or olive oil),
150g of wild rice,
150g of basmati rice,
2000ml of water,
1 handful of fresh parsley leaves (finely chopped),
1 handful of fresh chives (finely chopped),
50g of toasted almond flakes and
1tsp of salt.
Method

Wash the rice thoroughly then fry in the hazelnut oil to remove any excess moisture. |

Put the water in with the rice and bring to the boil. Lower the heat and simmer for 15 minutes. |

Drain any excess water then combine the remaining ingredients in with the rice and fry for 2 more minutes. |
