RECIPE :: humous
One of the greatest dips on our fair planet, it is creamy and garlicky with a fantastic citrus
under-flavour. Parsley can, when eaten fresh, neutralize the stink of garlic on your breath but
in this recipe the garlic will always win so if you share a bed with someone then seriously clean your
teeth or you may end up on the sofa.
Ingredients
250g / 9oz of cooked chickpeas,
½ a handful of fresh parsley (finely chopped),
5 cloves of crushed garlic,
6tbsp of olive oil,
2tsp of fresh lemon juice,
¼ tsp of cayenne pepper,
½ tsp of salt and
pepper to taste.

Mash your chickpeas in a large bowl until you get a consistency that you desire (I like mine
lumpy but smooth can be very pleasant). |

Combine all the ingredients together. |
Experimental points
This is a humous recipe that I love but you can add or remove anything to get a flavour you like.
Try olives, sun-dried tomatoes and coriander instead of parsley.
